About Si Yang Steam Soup
This is a stall with a history of 25 years. There are more than 10 herbal and non-herbal soups to choose from. Customers will find that the herbs at the bottom of each bowl are so soft enough to eat it. This is a very good indication of the right amount of temperature in the steaming process, as well as time control.
One key product is the turtle soup. The chef’s turtle soup was the winner in a competition on TV a few years back. It is unusual to find steamed turtle meat in soup in Singapore. It is even more rare to be able to taste such succulent turtle meat cooked in a steam of soup. The appropriate choice of herbs plays an important role in determining the taste of the final product. This can only come from a very experienced chef, like Mr Chua – the man behind the business.
One unique feature about the stalls is the high tower of steam basins – over 3 metres tall. Never in other similar stalls do you see a high stack of such basins. Such a method ensures the efficient use of heat, thus reducing the use of gas. The savings is passed back to the customer. Where else would you get Emperor’s Chicken (½ a chicken size) for less than $7? In competitive stalls, it is usually ¼ of a chicken in the wraps.
